Because of the drop in temperature in mid-September the window of opportunity for harvesting base wines for our sparkling wines is wider than in other years and we are looking forward to some wonderful sparkling wines.

Beginning of the harvest of our sparkling wine is determined by the moment at which the acidity is no longer aggressive, scratchy and sour, but fresh and animating.  From this moment and up to the point in this sweetness of the grapes develops into a heavier, more powerful direction is the ideal window for our sparkling wines.

From then on it is too late base wine for sekt: during the bottle fermentation there's sparkling wine gains an additional percent of alcohol per volume and would run the risk of becoming broad.
