After three weeks of wonderfully sunny weather the grapes have reached a degree of maturity similar to 2006.
In the extreme drop in temperatures and the changed weather now create a “refrigerator situation”, in which the grapes longer continuing the ripening process but are developing more refined aromatic compounds.
This development favours a lighter, more delicate wines. At our winery the harvest of the base wine for our sparkling wine has begun, and its delicate texture reminds of 2004.
In the rainy days we simply rest.
The two weeks leading up to this moment have been used to “clean” the vineyards: berries affected by peronospora and sunburn have been removed together with old leaves, allowing the bunches to dry quickly after the autumn rain, and every ray of sunshine to further the ripening. |
