2005 – No Year for Lazy Winemakers
A varied autumn climate improves the development of aromas in the grapes.
The grapes for the sekt base wine are almost all harvested, with an
ideal sugar content that will convert into about 11% of alcohol with an
acidity that is fresh and attractive, but not aggressive.
This will be a year for detailed berry selection. There is a
possibility of harvesting really fantastic grapes, but the risk of an
above average rainfalls remains.
The tannins in the grape pips are not yet ripe and green tannins
dominate. Transport and pressing therefore have to happen with the
greatest care in order to extract only fine aromas and not the biting
astringency of pips and stems.
In 2003, every “layabout” could take it easy and let nature make wonderful wines for him without contributing much himself.
2005 this will be very different and detailed work is necessary at
every stage: leaf work, cutting down grapes, bad berries and parts of
grapes, all with the greatest attention. |
