Cécile Blauburgunder 2004
This wine is made from a selection of the ripest Pinot noir grapes of the “Dechant” and the “Käferberg” vineyards. Those grapes are vinified with a relatively long maceration of 2 weeks. The wine matures predominantly in 300 liters Austrian oak casks (1st and 2nd fillings) for 12-18 months. Assemblage is made from selected barrels according to the prospective aging potential of their content. The wine is named after Willi & Edwige´s daughter Cécile. With appropriate cellaring this wine should keep a decade or longer.

Tasting note: Classic fresh Pinot fruit of red berries that follows through on the palate and is joined by flavors of minerals and spices; soft texture, elegant with still youthful tannins; well structured and balanced with integrated acidity and persisting fruit, some dried plum and toasty aromas in the long slightly spicy finish.
Food pairing: A wine to accompany venison and lamb as well as roast beef in burgundy sauce, roast duck or goose, and spicy cheeses as well. |
