January Rest
After the hard work during the harvest from September to late November and after the busy spell of Christmas business, the most quiet days in the year of a wine producer and his vineyards have now begun:
January rest.
The days are still short and dark, the days so cold that it is better not to cut into the frozen wood but to wait for warmer days and for another growth cycle.
This is the best time to make all necessary repairs in the cellar, to clear up, paint walls, and attend to long-overdue repairs. It is the only time of absolute, icy rest in the vineyards, beautiful days of meditation, ideal for gathering strength for the year to come.
